Strawberry Vanilla Donut
Ingredients:
Donuts:
- 240g All-purpose flour
- 20 ml Stevia Syrup Strawberry
- 10 ml Stevia Sweetener Vanilla
- 10g Baking powder
- 2.5 g Salt
- 120 ml Almond Milk
- 2 Large eggs or an alternative egg substitute
- 30 g unsalted butter or vegan alternative (melted)
- Vegetable oil for frying
White Chocolate Frosting:
- 180 g White chocolate chips or chopped bar (vegan options)
- 10 ml Stevia Syrup Strawberry
- 30 ml Almond Milk
- 45g Unsalted butter or Vegan butter alternative
Preparation:
For the donuts:
- In a large mixing bowl, whisk together the flour, baking powder, and salt.
- In a separate bowl, combine the almond milk, eggs, melted butter, and Stevia Sweetener Vanilla and Stevia Syrup Strawberry. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to over mix; a few lumps are okay.
- Heat vegetable oil in a deep saucepan or deep fryer to 175°C.
- While the oil is heating, you can prepare a tray lined with paper towels to drain the oil from the donuts after frying.
- Once the oil is hot, use a small ice cream scoop or two spoons to carefully drop spoonfuls of the batter into the hot oil. Fry in batches, being careful not to overcrowd the pan.
- Fry the donuts for about 2-3 minutes on each side or until they turn golden brown. Use a slotted spoon to remove them from the oil and place them on the prepared tray to drain excess oil.
For White Chocolate Frosting:
- In a microwave-safe bowl or a heatproof bowl set over a pan of simmering water (double boiler), combine the white chocolate chips or chopped white chocolate and the unsalted butter.
- If using the microwave, heat the mixture in 20-30 second intervals, stirring well after each interval, until the white chocolate and butter are completely melted and smooth. Be careful not to overheat, as white chocolate can scorch easily.
- If using a double boiler, heat the mixture over low to medium heat, stirring constantly until the white chocolate and butter are fully melted and smooth.
- Once the white chocolate and butter are melted, remove the mixture from the heat source and stir in the almond milk and Stevia Syrup Strawberry until the glaze is well combined.
- Allow the glaze to cool slightly, but make sure it remains pourable. If it thickens too much, you can gently reheat it in the microwave or over low heat to achieve the desired consistency.
- Dip your cooled donuts into the white chocolate glaze, allowing any excess to drip off, or drizzle the glaze over the donuts using a spoon.
Decoration tip:
Allow the glaze to set for a few minutes before serving. If you want to add decorative toppings like colored sprinkles or edible pearls, do so while the icing is still wet.
We used fresh strawberries and white chocolate chips as toppings.
